Chickpea Curry
Yesterday I mentioned that my Monday was very busy. First I took my oldest to preschool, packed up the younger 2 and went to the grocery store. The grocery store was not a pleasant time. Maybe I should volunteer to let some young teens shadow us at the grocery store. Might help with the number of teen pregnancies. I took GM, the 4 month old, in the front carrier thing, while GA, the 2 year old sat in the cart. Mid-way through the trip GM decided he’d had enough and was screaming. People started to stare. “I’m not torturing my children, honest. It’s the other way around!” I hurried through the remainder of our trip. Got home and unpacked groceries in time to pick the oldest up from preschool. (She only goes for 3 hours. It wasn’t that long of a grocery trip!)
Fed the kids lunch and got them down for nap. I then was on the phone getting quotes for new home and auto insurance. Kitchen still a mess from breakfast and lunch. And no dinner plans begun.
Enter this chickpea curry. This curry took literally 10 minutes to prepare and then the slow cooker did the rest of the work. It is warm and comforting on a chilly day. Even the kids ate it! It uses items you probably already have on hand and feel free to sub in any veggies you have. So, the next time you find yourself moments from insanity and still need to make something for dinner; make this curry. Maybe I should rename it. The Save Your Sanity Chickpea Curry
Ingredients
- 2 15 ounce cans of chickpeas or 4 cups cooked chickpeas
- 2 cups frozen green beans
- 2 cups frozen peas
- 2 sweet potatoes, peeled and diced
- 1 14 ounce can diced tomatoes
- 2 Tbs curry powder
- 1 tsp cayenne pepper (I took out some curry for the kids before adding this)
- 1/2 cup lite coconut milk (the canned kind)
- 2 cups fresh or frozen spinach
- salt and pepper to taste
- 2 cups cooked couscous for serving
Instructions
- Place everything but the coconut milk and spinach in the slowcooker.
- Turn slowcooker on high.
- Cook about 3 hours, until sweet potatoes are tender.
- Stir in the coconut milk and the spinach.
- Serve over the couscous.
- Pat yourself on the back for serving a delicious homemade meal to your family even after a day of chaos.

LOL at inviting teens to shadow you while grocery shopping. My husband and I have been trying for a while and whenever we’re shopping and a child is having a fit, my husband turns to me and says, “Are you sure you want kids? You’re really sure?”
I love this recipe because it’s for the slowcooker! I need more of those.
