Honey Mustard Tofu “Tenders”
After being vegetarian for almost a year and a half I think I can finally cook tofu well. In the past few weeks I have made not one but three tofu dishes that my hubby has given the thumbs up. First there was General Tso’s Tofu, then Tofu Bacon, and this week these crispy tofu tenders. These easy to make tenders might even convert some of those with tofu phobias out there. This recipe was based on This Woman Cooks‘ Honey Dijon Chicken Tenders.

Ingredients
- 1 package extra firm tofu, drained and pressed
- 1/4 cup mustard
- 2 T honey
- 1-2 cups panko bread crumbs
- salt and pepper
Instructions
- Preheat oven to 350 degrees
- Thinly slice the tofu
- Place the mustard and honey in shallow dish and mix
- Place the bread crumbs, salt, and pepper in another shallow dish and mix
- Coat the tofu on both sides with a thin layer of the mustard
- Next coat on both sides with the bread crumbs
- Place tofu on baking sheet that has been coated with cooking spray
- Bake 15-20 minutes on each sides, until golden brown
