Fried Black Rice with Tofu and Spinach
There is a lot of talk lately about black rice. My husband was able to bring a sample home from work so I was looking forward to trying it out. This recipe was adapted from a recipe in Whole Living magazine. I made a few adjustments and the end result was delicious!

Ingredients
- 3/4 cup black rice
- 2 1/4 cup water
- 1 package extra firm tofu
- 2 handfuls fresh baby spinach
- 2 cloves garlic, minced
- 2 T ground ginger
- 3 scallions, thinly sliced
- Sriracha sauce
- soy sauce
- sesame oil
Instructions
- Cook the black rice according to package directions. Mine said to combine 1 part rice to 3 parts water. Bring to a boil. Let sit 1 hour.
- Saute the garlic, white part of scallions, and the ginger in a little olive oil for about 1 minute.
- Add the tofu, crumble, and cook until tofu is browned.
- Add the rice and the spinach, cook until spinach is wilted.
- Drizzle with a little sesame oil and soy sauce.
- At this point I removed some for the kids and then added about 1 tsp of Sriracha to the remaining.
- Garnish with the green part of the scallions.
