Fried Black Rice with Tofu and Spinach

There is a lot of talk lately about black rice.  My husband was able to bring a sample home from work so I was looking forward to trying it out.  This recipe was adapted from a recipe in Whole Living magazine.  I made a few adjustments and the end result was delicious!

Fried Black Rice with Tofu and Spinach

Ingredients

  • 3/4 cup black rice
  • 2 1/4 cup water
  • 1 package extra firm tofu
  • 2 handfuls fresh baby spinach
  • 2 cloves garlic, minced
  • 2 T ground ginger
  • 3 scallions, thinly sliced
  • Sriracha sauce
  • soy sauce
  • sesame oil

Instructions

  1. Cook the black rice according to package directions. Mine said to combine 1 part rice to 3 parts water. Bring to a boil. Let sit 1 hour.
  2. Saute the garlic, white part of scallions, and the ginger in a little olive oil for about 1 minute.
  3. Add the tofu, crumble, and cook until tofu is browned.
  4. Add the rice and the spinach, cook until spinach is wilted.
  5. Drizzle with a little sesame oil and soy sauce.
  6. At this point I removed some for the kids and then added about 1 tsp of Sriracha to the remaining.
  7. Garnish with the green part of the scallions.
