Kale salad with lemon tahini dressing for Liz’s surprise baby shower!
Surprise! Today I am participating in a surprise baby shower for Liz of The Lemon Bowl. Liz is a fellow Michigan blogger that I had the pleasure of meeting last year. Liz already has a very handsome little boy and soon is going to be adding another little boy to the family.
Honoring Liz’s love of lemons Kristen, Sheila, and Rachel decided to put together a lemon themed shower for Liz. Liz is all about healthy eating so I brought a kale salad to the shower. Hubby is usually not a big fan of kale but even he is a fan of kale salad. The key is to massage the dressing into the kale leaves to soften the leaves a little.
This version of a kale salad includes apples, carrots, and pumpkin seeds for a nice crunch. The lemon tahini dressing is tangy and creamy.
